“New Mexico has a very distinct food culture and we draw a lot from that in / shed, but with Juliette we are going to keep it more a-cultural, focusing less on vernacular dishes, but on the abundance of food that is grown/raised around us at any given time. We are excited to create a restaurant that is fun but also nurturing. We are going to be very transparent about the ingredients we use and don’t use. We’ll only use good salt, avoid seed oils, have grass-fed beef, y mas”
